    2 cups warm water
    1 cup shredded 2% cheese
    1 tsp salt
    1 tsp onion powder

I found that it helps to steam the tortillas first. That way when you roll them, the tortillas stay closed. - 1/10/08

I altered it some -- threw in a small can of diced green chiles, used cream cheese in the meat mixture instead of shredded cheese, and put onion in with the meat. Great base recipe -- it was a most excellent dinner! - 7/24/08

I thought these were good but my husband thought they needed more seasoning/flavor. I'll probably use an enchilada sauce or more spices next time, but we'll make this again! This was gluten free too, a nice bonus. :) - 8/23/10

This was absolutely fabulous! My husband is the pickiest person and couldn't wait till I made these again. I use wheat tortillas instead of corn and I use Venison instead of beef, but other than that I followed the recipe to a t!

  • Excellent! I planned on making it as the recipe called for, but was tired so just made it a casserole by layering all of the ingredients instead of rolling up. Also added some of my favorites like black beans, diced tomatoes, corn and onion. Hubby LOVED it! (also subbed Boca crumbles for meat-free) - 4/28/11

  • I love the quickness of this recipe! It all came together so well, I used about half an onion in the meat and no salt to cut down the sodium. Our group loved it enough to come back for seconds! - 9/24/10

  • This was delicious and super easy. I didn't have tomato paste so I used 12oz of tomato sauce instead and just decreased the water to 1 1/2 cups. I still turned out great and my picky eater husband and toddler enjoyed it as well. - 9/23/10

  • I used ground turkey & cooked it with about 1/2 C of onion. I only had flour tortillas on hand also. I forgot to add corn, green chilis, olives and cilantro. Next time I will try more additions, maybe even kick it up with jalapenos! - 1/28/10

  • This was a great dinner. We all loved it. I did add my personal touch ...
I added a can of diced tomatos with hot peppers, 1/2 teaspoon of red pepper (it decreases appetite), browned the meat with 1/4 cup of water, then drained the water and fat in a colander. - 8/15/07

  • This sounds good. I will use salt free tomato paste and cut the salt...add some garlic , maybe cilantro and jalepeno. I will most likely substitute flour tortillas for the corn. - 7/14/07

  • Tasted Very good and was easy. I just couldn't get the corn tortillas to stay closed they either rolled open, or the sides would break open. - 3/22/07
