Submitted by: BRIANASOP

Introduction

An Indian-inspired sweet and tangy condiment that pairs well with meats. It can also add an exotic kick to hot breakfast cereals, or you can use it as a sandwich spread.

Buying pre-cut fruit will cut down on preparation time, but have often to you get to cut into a whole pineapple?

Ingredients

About 4 ripe mangos, cut into bite-sized pieces
1 ripe pineapple, cut into bite-sized pieces
    1 cup light brown sugar
    1 cup cider vinegar
2-3 cloves garlic, minced or grated
A 2 inch piece of fresh ginger, minced or grated
Cayenne pepper, 1/2 TBSP or to taste
Salt and pepper, 1tsp each or to taste

Directions

Combine all ingredients in a large skillet or saucepan and bring to a boil over medium-high heat. Reduce heat to low and simmer for 25-30 minutes, stirring frequently to keep the mixture from sticking or scorching. Let chutney cool before serving and keep unused portions refrigerated.
