Number of Servings: 3

Ingredients

    Asparagus, fresh, 451 grams (1lb) Break at the base by fingers to separate edible part and chop into 1/2- 3/4" pieces with all the fiber. Keep the tip about 1" long.
    Split Black Gram (Urad Dal) Laxmi brand, 1 tsp.
    Indian Andhra mustard seeds ( small, dark brown) 1/2 to 3/4 tsp,
    Olive Oil, 1 1tsp
    Kosher salt 1/3 tsp.
    Shredded coconut, 2 tbsp ( optional) for garnish.

    All the ingredients are available in Indian grocery stores.

Directions

Heat Olive oil and drop mustard seeds in them. Once they krackle, drop the split, clean urad dal and 1 red, dry chili pepper or sprinkle a bit of red chili flakes. Drop the rinsed, chopped asparagus, 1/4 cup less 1 tb. of water, salt to taste, stir well, cover tight and let cook for 3 minutes. Stir once more and let cook covered till tender - another minute or so. Sprinkle with shredded, fresh frozen coconut and serve as a side dish.
