Mediterranean Green Tea Penne

Introduction

This is a variation on SPAQUETTE's excellent recipe, adjusted for my love of garlic and how many servings it yields. This recipe has more chicken.

Number of Servings: 9

Ingredients

    Cooked:
    2 lbs chicken breast
    1 bulb garlic
    2 Tbsp olive oil
    1 medium onion, sliced thinly
    2 Bell Peppers (mixed colors works best!)
    1 lb broccoli florets

    1 box (14 oz) Barilla Plus (or equivalent) penne
    6 bags green tea (I'd recommend decaf!!!)

    Sauce:
    1 can diced tomatoes (or 2 cups drained sun-dried tomatoes)
    1 bulb garlic
    1/4 cup fresh basil (or 1T dried)
    1 Tbsp balsamic vinegar
    1 Tbsp olive oil
    1/2 cup feta crumbles

Directions

Bring 6qt water to a boil

Slice chicken into thin strips and chop garlic coarsely, and saute with onions and peppers in olive oil. Add salt to taste, set aside when cooked.

When water is boiling, turn off the heat and add tea bags, let it steep for about 5 minutes. Turn on heat and cook noodles as directed.

Steam broccoli (microwave for about 5 min works well) and set aside.

Prepare sauce by combining oil, vinegar, tomatoes, basil, and garlic (depending on how you like garlic, you can either put it in raw or "roast" it in the microwave for about 30-45 seconds to mellow the flavor).

toss everything together and serve.

makes 8-10 servings of around 1.5 cups each.
