lean ground turkey enchilladas

Ingredients

1.5 lbs ground turkey
1 15.5 oz can black beans, dranied and rinsed
1 bell pepper chopped
2 10oz cans enchilada sauce
1 14.5oz can petite cut diced tomatoes, drained and rinsed
1 pkg taco seasoning
2 cups brown rice
1 cup water
1 cup sour cream
2 cups shreeded cheddar cheese
12 8in flour tortillas
Directions
Brown ground beef. Drain Fat. Add taco seasoning and water. Let simmer 5 minutes. Mix in black beans, pepper, 1 can enchilada sauce, tomatoes, brown rice, sour cream, 1 cup cheese. Stir occasionally until hot. Remove from heat
Spoon 3/4 cup mixture into each tortilla, wrap and place in 9X12 baking dish. Pour 1 can enchillada sauce over tortillas. Bake at 350 for 7 minutes, remove from oven, sprinkle 1 cup cheese overtop, bake for 5 minutes.
Let set for 5 minutes.
