Fried Brown Rice with Turkey Sausage

Introduction

I make a batch of this each week and take it for lunch. I mix up the veggies with whatever I have on hand..shredded carrots, leftover sweet corn.... I make a batch of this each week and take it for lunch. I mix up the veggies with whatever I have on hand..shredded carrots, leftover sweet corn....
Number of Servings: 4

Ingredients

    6 - Italian Turkey Sausage (cooked)
    3 cups brown rice (cooked - leftover cold works best)
    garlic
    low sodium soya sauce
    pepper
    1/4 chopped scallions
    1/4 diced zucchini
    1 tbsp olive oil
    1 large egg

Directions

Beat the egg with 1-2 tsp water. In seperate pan cook until done (looks like a flat omelet). Turn onto cutting board a finely chop. Set aside.

Saute veggies in 1 tsp oil until just tender. Add remaining oil, rice and chopped sausage, and seasonings, saute until hot. Stir in chopped scrambled egg.
