Introduction

Salmon dish based on a greek salad. Salmon dish based on a greek salad.
Number of Servings: 2

Ingredients

    Salmon fillet for 2 people (recipe calculated for 7oz each)
    1/4c feta
    1 plum or roma tomato, diced
    1/4-1/2 cup kalamata olives, chopped
    1/4 red onion, diced
    4 basil leaves, chopped
    olive oil
    lemon juice to taste

Directions

Preheat oven to 350

Lightly coat both sides of salmon with olive oil and place skin-side down in baking dish.

Top fish with tomatoes, onion, basil, olives and feta. Drizzle with lemon juice as desired

Bake for 20 minutes or until flaky.
