Kale, white bean and potato soup

Introduction

This is a really great winter soup with almost a full day's serving of vitamin C This is a really great winter soup with almost a full day's serving of vitamin C
Number of Servings: 4

Ingredients

    1 medium Red onion, thinly sliced
    1 clove of garlic, minced
    1 tbsp extra virgin olive oil

    4 cups of vegetable broth
    1 tbsp sherry

    2 cups of kale, sliced in thin ribbons
    2 cups of cubed new potatoes
    1 can of navy beans, rinsed and drained

    1 tsp red pepper flakes
    1 tsp salt
    1 tsp black pepper

    1 lemon, sliced into wedges

Directions

sautee the first three ingredients in olive oil for 5 minutes or until translucent.

Add sherry and broth and bring to a boil

Add vegetables, beans and seasonings and bring to a boil again, then reduce heat to medium and simmer for 15-20 minutes or until all vegetables are cooked.

Serve with a wedge of lemon.
