Diet Pumpkin Butter

Introduction

I made this the other day, and added the sugar, but I think it can be made without it, and just Splenda. I put 25 packets in and it's really sweet and really yummy. Number of Servings: 64

Ingredients

    Place all ingredients in large sauce pan (make sure that there is a lot of pan, and less pumpkin pulp, as it splatters!

    Stir ingredients until mixed, cook on medium heat until it begins to boil, then lower heat and cook for about 20 - 30 minutes.

    Enjoy on toast, crackers, anything you'd use apple butter on. I hear it's good in oatmeal, but haven't tried it.

Directions

Makes about 4 cups, spoon out by the tablespoonful.
