Tom Kha Gai

Number of Servings: 4

Ingredients

    2 cups chicken broth
    13.5 oz coconut milk
    10 oz boneless skinless chicken breast
    15 oz straw mushrooms
    3 tbs sliced lemon grass
    1 tbs galangal, minced
    3 tbs lime juice
    4 tbs lemon juice
    2 cloves garlic, minced
    3 scallions, sliced
    1 tbs fish sauce
    2 tsp chili paste

Directions

Bring the chicken stock, coconut milk, garlic, lemon grass and galangal to a boil.
Reduce heat to simmer and continue cooking for 10 minutes.
Meanwhile thinly slice the chicken breast into bite sized pieces.
Add the chicken pieces.
Simmer until the chicken is cooked through.
Add the mushrooms, lemon juice, lime juice, fish sauce, chili paste, and scallions.
Simmer for a few minutes until flavors combine.

Makes 4 approximately 1 to 1 1/2 cup servings.
