Mom's Scallop Potato Bake

Ingredients

    6 large potatoes (preferably red or yukon gold)
    1 large onion
    2 cans 98% fat free Cream of Chicken soup
    1.5 cups of ham
    salt and pepper to taste

Directions

Preheat oven to 350 degrees
Use a mandolin or food processor to slice potatoes thinly. Set aside.
Use a mandolin or food processor to slice onions into rings. Set aside
Mix soup in a bowl so that consistency is creamy.
Spray a large rectangular baking dish with cooking spray.
Spread a small amount of soup in bottom of pan, top with single layer of onion, then potato, and finally ham. Continue in this way until all ingredients are used.
Place in oven covered and bake for 30 minutes. Uncover for remainder of cooking time. Test potatoes at 45 minutes to determine doneness.
