Woolley's Malibu Chicken

Ingredients

    Ritz crackers
    boneless skinless chicken breast
    swiss cheese
    sliced ham

Directions

This recipe is easily adaptable, but for this nutrition info, I used 4 chicken breasts (2 large, 2 medium), about 2/3 of a ritz cracker tube, crumbled, 4 slices of swiss cheese, and 10 slices of smoked ham lunchmeat.

Cut each breast down the middle, fold ham to fit inside, close, dip in milk (opt.), then dip in cracker crumbs, set in baking dish (sprayed with nonstick cooking spray). I like to then cut the big breasts in half so that all pieces are roughly the same size (today's 4 breasts turned into 8 servings---again, you can easily do more or less depending on how many are eating). Bake at 350 for 30-40 minutes, until chicken is cooked through. Put slice of swiss cheese on each piece of chicken, turn off oven, put the pan back in with temp off to let the cheese melt (about 5 minutes). Then it's ready to serve!

For lower cal/fat, you can use fewer crackers, also reduced fat crackers, and you can use less cheese (I was thinking that using a sprinkle of grated cheese might work well). As it is, for such a great tasting, satisfying meal, it's amazingly healthy.
