Soup - Almond Broccoli

Soup - Almond Broccoli

Number of Servings: 8


    1/4 cup of almonds, sliced or crushed
    2-3 pounds of Broccoli
    1 onion (sliced)
    1 cup of milk
    1 Tbsp. all purpose flour
    2 tsp. cooking oil (rice bran or grape seed)
    1 1-inch piece of ginger slice
    Salt and pepper to taste


1. Wash and cut Broccoli into two inch pieces.
2. Remove the stubborn skin off the stems. Bring the broccoli stems and florets to boil in three cups of water.
3. Remove the broccoli from water, add desired salt and set aside. Save the water for using later.
4. Add a teaspoon of oil in a sauce pan. Sauté onion to transparency and set aside.
5. Next, blend the sautéed onions with the cooked broccoli and the water used in boiling.
6. Heat a teaspoon of oil in a pan. Add a tablespoon of all purpose flour and as soon as it turns golden brown, add almonds, pureed mix, and milk.
7. Let it simmer for a few minutes. Serve hot and enjoy!
