Introduction

•Fresh beans or dry beans soaked overnight instead of canned beans are always flavorful
•Add chick peas and black eye peas for variations.
•Add fresh herb of your choice!

Number of Servings: 10

Ingredients

    1 large onion, thinly sliced
    1 7 oz can of black beans
    1 7 oz can of navy beans
    1 7 oz can of pinto beans
    1 7 oz can of red kidney beans
    1 7 oz can of whole tomatoes
    1 pound of thinly sliced green beans
    2 Tbsp lemon juice
    A handful of fresh green coriander, chopped
    Salt & Pepper to taste

Directions

1. Saute onions to transparency in a teaspoon of oil.
2. Boil three cups of water in a big pot, turn the stove down to a low heat. Add green beans, contents of the tomato can, salt and pepper. Let it simmer for 5 minutes.
3. In the meanwhile, open the cans of beans and pour the contents into a colander. Rinse the beans and then add them to the pot. Turn off the stove, add lemon juice and garnish with coriander.
4. Serve hot and enjoy!
