Introduction

Number of Servings: 10

Ingredients

    2-3 pounds of Broccoli
    1 onion (sliced)
    1 cup of milk
    1 Tbsp. all purpose flour
    2 tsp. cooking oil (rice bran or grape seed)
    1 package of soft silken tofu (cubed) – Optional
    Salt and pepper to taste

Directions

1. Wash and cut Broccoli into two inch pieces. While adding stems, remove the stubborn skin. Thinly slice a few floret heads to yield half a cup of floret grains and set aside.
2. Add a teaspoon of oil in a sauce pan. Sauté onion to transparency, add desired salt and pepper. Set aside.
3. In the meanwhile, bring the broccoli stems and florets to boil in three cups of water. Remove the broccoli from water, add desired salt and set aside. Save the water for using later.
4. Blend the sautéed onions with the cooked broccoli and the water used in boiling.
5. Heat a teaspoon of oil in a pan. Add a tablespoon of all purpose flour and as soon as it turns golden brown, add pureed blend and a cup of milk while stirring constantly.
6. Simmer for a few minutes. Add the tofu, garnish with the floret grains and serve hot. Enjoy!

  • Just did this for myself but with some changes. Added one thin slice of real deli turkey breast and roast beef. Also added carrots, garlic and one slice of velveeta. And I have lunch for tomorrow. Yes! - 5/3/10
