Easy Crockpot Lentil Soup

Introduction

This hearty soup is tasty, filling, and couldn't be easier to make! Feel free to adjust the spices to suit your taste, add other veggies, put in some browned meat or sausage, or try pureeing the soup with a stick blender after cooking for a different texture.

Ingredients

    1 lb. lentils, rinsed and drained

    1 (14 oz.) can diced tomatoes

    3 large carrots, chopped

    2 celery stalks, chopped

    1 medium yellow onion, chopped

    3 cloves garlic, minced

    1 tbs. olive oil

    1 tbs. Kosher salt

    2 tsp. freshly ground black pepper

    1 tbs. dried thyme (a few sprigs of fresh would be even better, if you have it)

    1/2 tsp. ground cumin

    10 cups chicken or vegetable broth, low sodium prefferred (If you don't have this on hand, just add water and dissolve about 5 bouillon cubes into it.)

Directions

Saute onion and garlic in 1 tbs. of olive oil over medium heat until onion is soft and translucent. Pour into a crockpot, along with chopped carrot and celery, canned tomatoes, lentils, and chicken broth. Add salt, pepper, thyme, and cumin, and stir to combine ingredients.


Set crockpot to low setting (about 8 hour cooktime, or whatever is convenient for your schedule... it's hard to mess up this soup!) Serve with a sprinkling of parmesan cheese for a delicious extra treat.


Makes about 8 - 1 and a half cup servings.
