Lentil & Pasta Soup

Number of Servings: 6

Ingredients

    2 tsp canola oil
    1 medium onion, chopped
    2 garlic cloves, minced
    1 carrot, diced
    2 stalks celery, chopped
    1 - 19 oz can lentils, undrained
    1 vegetable boullion cube, optional
    1 - 28 oz can diced tomatoes
    1 cup water
    1 Tbsp sugar
    1/4 tsp each: savory, thyme, & black pepper
    1/4 cup small pasta

Directions

1. In a large pot, heat oil over medium heat. Add onions and garlic. Saute for 3 - 5 minutes until onions are softened.
2. Add all other ingredients, except pasta. Bring to a boil, reduce heat and simmer for about 10 minutes.
3. Add pasta and let cook another 15 minutes or until pasta is done.

Serves 6.
