Ingredients

    Ingredients:


    Chicken Breast, no skin, 8 ounces
    Spinach, fresh, 2 cup
    Mushrooms, fresh, 1 cup, pieces or slices
    *Classico Fire Roasted Tomato and Garlic pasta sauce, 1 cup
    *Whole Wheat Penne Pasta (dry), 4 oz
    Parmesan Cheese, grated, .25 cup
    Good Seasonings Italian Dressing Mix, 1/2 packet
    Olive Oil, 1 1tsp

Directions

Boil whole wheat penne noodles as instructed on package. Sprinkle Good Seasonings Italian Dressing Mix on both sides of chicken (I use a half of a packet for 2 servings). In a seperate large pan, add 1 tsp. olive oil and heat for 1 minute on medium low. Add chicken and cook until lightly browned on one side. Flip chicken over and cook on other side. Add mushrooms and saute with cooking chicken. When they are almost done, add spinach and cook until wilted. Add Classico tomato sauce and heat until warmed through. Mix with penne pasta, add paremsan cheese and enjoy :)
Serves 2.
