Soup - Mixed Vegetable & Tofu

Introduction

Number of Servings: 10

Ingredients

    1 pack frozen mixed vegetables
    2 hot green peppers, sliced or crushed
    1 inch piece of ginger, sliced or crushed
    1 onion, thinly sliced
    1 tsp. grapeseed oil
    90 oz. can of Tomato Juice or V-8 Juice (6 cups)
    1 tub of Tofu, cubed
    2 Tablespoons of lemon juice
    Salt & pepper to taste

Directions

1. Add a teaspoon of oil in a sauce pan. Sauté onion to transparency; add hot peppers and ginger along with salt and pepper. Set aside.
2. Pour V8 or Tomato Juice into a pot, and bring it to a boil.
3. Add the frozen vegetables and let it simmer for 20 minutes.
4. Add the sauteed onions, cubed tofu, and lemon juice.
5. Serve hot and enjoy!
