Introduction

A light and tasty eggplant parmesan A light and tasty eggplant parmesan
Number of Servings: 4

Ingredients

    1 large eggplant
    1 cup tomato sauce (plain nothing added)
    1 egg
    1/2 cup bread crumps
    1/4 cup flour
    4 oz mozzarella cheese partly skim
    1/4 cup oil

Directions

Slice eggplant dreeg in egg, and then in the flour and bread crumb mix.
but oil in pan and fry eggplants till light brown.
transfer to baking dish with a few spoon fulls of tomato sauce on the bottom.
Add your eggplants and layer them adding sauce on top as you go fish with the cheese on top.
bake till cheese melts 5 to 10 mins.
