Pork Piccata

Number of Servings: 1

Ingredients

    3 oz center cut pork chop, trimmed and pounded thin
    1 slice prosciutto
    1 slice fresh mozzarella
    1/2 roasted red pepper sliced
    2 T. fresh parsley, chopped
    salt and pepper
    1 tsp olive oil


Directions

Pound pork until 1/4 inch thin. Lay on a piece of plastic wrap. Salt and pepper and add parsley. Place a slice of mozzarella and
pepper onto the meat. Roll, wrap in prosciutto and secure with a toothpick.

Heat oil in nonstick skillet. Cook rolled meat in pan until browned on all sides.

Makes one serving.
