Impossibly Easy Chesapeake Bay Crab Pie

Introduction

Adapted from a Betty Crocker recipe both for nutritional content and personal taste. The original recipe equaled 255 calories and 17 grams of fat. My changes have nearly halved that. Ingredients

    Chicken of the Sea Lump Crabmeat, 6 oz. Can, rinsed and drained
    Chicken of the Sea Fancy Crabmeat, 6 oz., rinsed and drained (cartilage removed)
    1 cup Kraft 2% Milk Shredded Sharp Cheddar
    3 oz. Reduced Fat Philadelphia Cream Cheese, cut into 1/4 inch cubes
    1/2 cup Heart-Smart Bisquick baking mix
    1 cup skim milk
    1/2 tsp. salt
    2 egg whites
    2 1/2 tsp. Old Bay Seasoning, separated

Directions

Heat oven to 400 degrees. Spray a 9x1 1/4 inch pie plate with cooking spray.

Mix crab, cheeses and 1 tsp of Old Bay in the pie plate.

Stir Bisquick, milk, salt, egg whites and 1 tsp. of Old Bay in a separate bowl until well blended. Pour over ingredients in pie plate. Sprinkle with remaining 1/2 tsp. of Old Bay.

Bake uncovered 35-40 minutes or until golden brown and knife inserted in center comes out clean (some cream cheese may stick). Let stand 10 minutes before cutting.

Makes 6 servings.
