Low Carb Sausage Breakfast Sandwich

Back in the day when I lived at the drive-thru, a sausage muffin with egg and cheese was always the choice for breakfast. Now that I am out of that rut I find it takes no more time to make my own and I save tons of calories and fat and carbs. Ingredients

2 slices Sara Lee Delightful White Bread
2 oz. Healthy Choice L/F Smoked Sausage - slices to fit bread
1/4 c Egg Substitute - I used Egg Beaters Southwestern [1 Large Egg can be used but it will throw off the calorie count]
1 - 1oz slice L/F Cheddar Cheese [ can substitute alternate low-fat cheese of your choosing.
Pam
Water
Salt
Pepper
Directions
Toast the bread - to desired color.
Take a square plastic container - approx size of bread, spray with Pam. Add Egg Substitute and chopped up sausage, dash of water, Salt and Pepper to taste. Scramble mixture with fork. Place in Microwave on High for 1.5 min. Check eggs, if still runny, five another 30 seconds. Top Eggs with Cheese, and invert onto a peice of toast. Top off with remaining peice of toast and enjoy.
An Easy on the go Breakfast or Simple Late Dinner w/ Salad. [not included in calorie count]
If sodium is an issue, choose another sausage, perhaps Jimmy Dean Lite - if using bulk sausage slightly pre-cook, the microwave will finish the job.
Makes 1 Serving.
PS: If you have never made scrambled eggs in the microwave, no worries. A dash of water keep an eye on it - 1-2minutes. Non scrambled eggs not a good idea - yolks tent to blow up.
