Southwest Style Egg Sandwich

Introduction

Once upon a time McDonald's had a Southwestern Bagel Sandwich. I used to crave them, hold the meat, and then they disappeared from all the Micky D's in my area. Now I have joined SparkPeople I wanted the taste of things I craved, but without the unhealthiness that went with it. My version of a Micky D's SouthWestern Breakfast Sandwich Once upon a time McDonald's had a Southwestern Bagel Sandwich. Ingredients

    2 - Slices Sara Lee Delightful Whole Wheat Bread
    2 T Ready Pac Pico De Gallo [I took some help from the store, but you can make your own]
    1/2 c. Egg Beaters Southwestern [plain or another flavor can be substituted]
    1/4 c. L/F Cheddar or Colby Cheese shredded [ a L/F shredded Mexican style or PepperJack would work well too]
    Pam
    Salt
    Peppar
    Tabasco [optional]

Directions

Toast bread to desired doneness.

In a microwave safe container approx the same size as your bread, lightly spray with Pam. Add Egg Beaters, Pico De Gallo, Cheese, Salt, Pepper and a dash of water.

Scramble mixture together.

Cook in microwave for 1 1/2 minutes, check. If center is still runny, cook for another 30-40 seconds. Do not overcook.

Invert eggs onto one slice of bread, top with the other. Enjoy!

Makes 1 Serving.

Easy enough for the whole family to do on the run.
