1/2 cup freshly scraped coconut meat from a young coconut
1 pound carrots
1 teaspoon seaweed
4 Slices Pumpernickel Rye Essene Bread
2 slices onion
2 slices tomato
1/2 avocado, sliced into wedges
Combine the juice with coconut meat and seaweed, marinate until the coconut meat is a rich orange color. This is the lox. Place lox on a piece of bread, add onion, tomato and avocado.
