Baked beets and balsalmic

Introduction

A tasty, spicy, low calorie side. A tasty, spicy, low calorie side.
Number of Servings: 3

Ingredients

    2-3 large beets (about 1.33 lbs)
    1 cup mushrooms pieces or slices
    1 tsp garlic powder
    1 tbsp black pepper
    2 tbsp Balsamic Vinegar
    2 oz President Fat Free Crumbled Feta

Directions

Peel and dice beets. Spray 9x13 pan with canola spray and distribute beets evenly over pan. Season with pepper and garlic. Bake in 375˚ oven for 40 minutes. Add mushrooms and balsamic and bake another 20 minutes. Remove from oven and sprinkle with feta.
Makes 3 servings.
