Fusili With Sausage & Mushrooms

Introduction

I love pasta and most anything with mushrooms. The original recipe called for hot Italian sausage but I used hot turkey Italian sausage. If you don't like the spiciness or heat use regular turkey sausage. My daughter the cheese freak adds both Parmesan and mozzarella while the pasta's still hot. Ingredients

    8 oz (2.5 links) Butterball hot Italian sausage, casing removed
    Olive oil cooking spray
    12 oz sliced white mushrooms
    26 oz jar Ragu Light Tomato & Basil pasta sauce
    8 oz fusili or spiral pasta
    1/4 cup grated Parmesan

Directions

Cook pasta accordint to package directions; drain, set aside.

In a 12 in skillet brown sausage, over medium high heat. Remove from heat and cut into 1/2 in thick slices; set aside.

Spray the same skillet with olive oil cooking spray and sauté mushrooms over medium high heat, stirring occasionally until tender.

Return sauge to skillet, stir in sauce and simmer covered, stirring occasionally. Spoon over hot pasta and sprinkle with Parmesan.

MAKES 6 3/4-CUP SERVINGS
