Ingredients

150g fresh or frozen Raspberries
4 tbsp icing sugar, sifted
284mL double cream
Directions
Whip the cream until stiff. Blend raspberries and sugar until a thick coulis. Push through a sieve to get rid of pips and stir into the cream. Serve over crushed meringues with a couple of whole raspberries on top. Makes 5 really good dollops.
