Introduction

you can use a variety of veggies in this recipe. eggplants, zuchini, and squash work well. you can use a variety of veggies in this recipe. eggplants, zuchini, and squash work well.

Ingredients

    1 cup onion chopped
    1 cup red pepper
    1 cup mushrooms chopped
    1.5 cup of mexican style cheese
    6 whole wheat tortillas
    1 T cilantro

Directions

preheat broiler. coat cooking pan w/ cooking spray. cut up all veggies except for pepper. place single layer of all cut up veggies on pan except for onion. coat veggies w/ a little cooking spray

broil veggies for 10 min about 2 in from broiler. turn them after 5 min. let them cool and peel peppers if desired. but up pepper.

place 3 tortillas on flat surface. divide veggies and cheese. shake of cilantro on each. cover w/ remaining tortillas

cook in a nonstick skillet w/ cooking spray. heat med-hi heat. each side about 1 min. check to make sure cheese has melted.

serving is one quesadilla
