One of my favories. Easy to make, super healthy, and a good source of protien when not eathing meat. I've inclued my favorite vegtables but use what ever vegtables are in your kitchen. Ingredients

Spinach, cooked, 1 cup
Mushrooms, fresh, 1 cup, pieces or slices
Zucchini, .5 cup, sliced
Eggplant, fresh, 1 cup, cubes or slices
Milk, 2%, .5 cup
Omelet (egg), 6 large
Egg white, 3 serving
Red Ripe Tomatoes, 1 large whole (3" dia) sliced
Parsley, 2 tbsp
Pepper, black, 1 dash
Salt, .5 tsp
Swiss Cheese, 85 grams
Directions
1. Lightly oil and flour baking dish. Layer vegtables and cheese in baking dish. I like the tomato slices on top.
2. Beat eggs. Add milk, salt, pepper, and parsley.
3. Pour over vegtables.
4. Bake at 375 for 15 minutes, until eggs and veggies are cooked through.
