Parmesan Tuna Patties (low fat, low carb)

Introduction

These are fast and tasty. If desired, top with a bit of marinara, mustard, etc. This makes 4 small patties, so I usually double the recipe for my family. These are fast and tasty. Number of Servings: 4

Ingredients

    1 (6 oz) can light tuna
    1 tablespoon reduced fat mayonnaise
    1 large egg or 1/4c egg substitute
    2 tablespoons Parmesan cheese
    2 tablespoons ground flaxmeal
    1 dash garlic powder
    1 dash onion powder
    1 dash salt

Directions

Drain tuna. Blend all ingredients in a medium size bowl and form into patties. (1/4 cup per patty) Once in the skillet, lightly press with a fork to form the patty. Fry for a few minutes on each side in oil (I use olive oil, but you may use cooking spray) until brown on edges. Turn. Fry until done.

Makes 4 patties.

    I found this recipe last week and have made it twice - my husband and I love them - I nixed the flax seed, added 1 tbsp parsley and 1 tbsp chopped green onions. I also baked them instead of frying for 10 mins at 350 degrees....so good, so cheap, I will be making these again and again. - 3/5/12

    The thought of cooking a tuna patty made with mayonaise was a strange thought to me but I was attracted by the nutrional info and so gave it a try. Baked it rather than fried it, used egg substitute and nonfat cheese and it was quite tasty! Thank you! - 5/18/09

    I made these and added onion, celery and black pepper. Also used egg substitute.Instead of mayo I used 1/2 Tbsp. Miracle Whip Light and 1/2 Tbsp. Dijon mustard. So yummy and healthy. I'm going to try it with canned salmon next time. - 3/26/09

    WOW!! this is so good. This is so quick to make. I did not have flaxmeal so I left it out and it still turned out wonderful. I didn't fry in oil; I just grilled on my non-stick griddle which I use for everything. 2 patties will fill you up. Perfect on a bed of lettuce with some vinigarette. - 2/21/10

    I just made these. Used 1 egg white and used 1 Tbsp of Nonfat Greek Yogurt instead of the mayo. Only 1 Tbsp of flax meal Very yummy. I will definitely make these again!!! - 2/9/11

    The thing I like the best about these is the texture. When I was mixing them I was worried they might be runny but once they'd cooked on each side I was pleasantly surprised how they firmed up! The flavor was little bland compared to how I usually cook but that is easily fixed. Great base recipe! - 4/13/09

    Just made this for my dad as a light meal while he's painting. He didn't want to eat it so quickly, but his brushes were drying. :) I added Ground Mustard, used ground cheese, added some Cayene Pepper, regular pepper, very thinly diced green pepper, and subbed the flaxmeal with oat bran.     I thought this was delicious! I don't have flax meal, so I used 2 Tbls of Panko bread crumbs, but I'm still considering it a low-carb meal. I also left out the salt and added some creole seasoning to give it a little kick. It's a nice change of pace for canned tuna! - 7/25/12

    Didn't have the flax so used a little almond flour instead. Yummy! I used cooking spray and they stuck to my non-stick pan so next time I will use the oil. Will definately make this again. A nice switch from my "tuna mixed w/may" normal lunch on Atkins! :) - 8/10/11

    I like these. I added mustard to the mix and made two big patties instead of 4 small. Just cook a little longer to make sure the egg gets cooked. Fits nicely on a sandwhich thin. - 6/4/10

    Tuna is a pantry staple mainly for lunch, but I love the idea of making this for dinner. I love the idea of adding the onion and baking ans a way to reduce the caolories. It is going in my cookbook! - 1/27/10

    I am enjoying these as I write! They are fantastic! The only difference I did was not use the mayo, I was out! So I added in an extra egg white. I also like spicier food, so I had a heavier hand on the onion and garlic powders. Next time, I'm going to try using fresh and baking them! - 7/11/09

  • These came out really good. For 3 of us, I doubled everything except the flaxmeal - did 1.5 times the amt., didn't want to dry 'em out. No reduced fat mayo, but hopefully the extra flaxmeal evened it out healthily. Also added a dash of black pepper. They like it. Will definitely make again. - 5/25/14

  • Loved this cheesy twist on the old classic! Probably the best tuna patties I've ever had. I did add an extra can of tuna, with yielded 4 med/sm patties-- perfect for my boyfriend and I. I also subbed a 1/4 teaspoon minced garlic & a little diced onion for the suggested powders. - 4/6/14

  • Very easy to make with ingredients I had on hand! I think I added too much egg so I mixed in some quick cooking oats to help firm the patties up. I topped with chopped fresh herbs and a lemon slice. They were quick, easy and very tasty! This will definitely be on my dinner rotation! - 6/19/13

  • Very yummy. I used 10 oz of tuna and non-fat plain greek yogurt instead of mayo. Then I used a recipe I found on here for tuna salad with avocado and put it on top. It was tuna, avocado, tomato, plain greek yogurt, and pickle relish. It made a very nice topping on this. :-) - 1/5/13

  • If you are looking to lower the sodium even more, try Very Low Sodium White Albacore Tuna and Mrs. Dash seasonings (no salt added). My husband has high blood pressure so its a great way to substitute for seasonings that may add sodium. - 3/22/11
