Spicy Chicken and Mushrooms

Number of Servings: 4

Ingredients

    1 tsp olive oil
    2 cloves garlic
    1 tbs minced ginger
    2 c sliced mushrooms
    1/2 tsp red pepper flakes
    1/2 tsp salt and pepper (each)
    1 lb boneless, skinless chicken breasts, cut into 1/2 inch pieces
    1.5 tbs soy sauce
    1 tbs rice vinegar

Directions

Heat oil in skillet. Saute garlic and ginger for one minute. Stir in mushrooms, scallions, and red pepper flakes. Cook 3 minutes, stirring often.

Reduce heat to medium. Add chicken to pan and season with salt and pepper. Cook, stirring for 4 minutes, until cooked through.

Stir in soy sauce and vinegar. Cook 2 minutes.

Serve over rice (not included in nutrition information).
