Introduction

I love the flavor of hot oil in many things. I just don't have the membranes that can tolerate them. Also instead of adding a pepper to a dish and forgetting it until it is too late I just add a few drops to the cooking oil. Leave it longer for more heat. The same method is use to make Annatto oil that gives a lovely orange yellow color to Mexican cooking. I love the flavor of hot oil in many things. Ingredients

    1/4 cup oil
    1 chili pepper

Directions

This is very simple to make and will not "cost" more then the value of the oil.
Have the ingredients ready. One small sauce pan. Just heat the oil to before smoke add the chili pepper (s). Or Annatto seeds from the Mexican food section. Swirl the oil and heat with the seeds or chili in the oil until it gets a bit of color. Let cool and test for heat. You will probably like more chillies then I so go right ahead and add.
The Annatto seeds have a light flavor so heat and swirl until it has a nice deep color (about 1/8 cup seeds). I have used this to color rice and sauté before adding broth to finish cooking it. Lovely yellow rice, add onions. Great go with. Recycle your used small bottles for these.
