Ratatouille with Penne

Ingredients

    *Campbell's Tomato Soup, 1 can
    Olive Oil, 1 tbsp
    Pepper, black, 1 tsp
    One small Eggplant, 5 cup (1" cubes; peeled)
    Zucchini, 1.5 cup, sliced (1 medium)
    *Peppers, sweet, red, fresh, 1 cup, chopped (1 medium)
    Onions, raw, 1 , sliced
    Garlic, 1 clove (minced)
    *Whole Wheat Penne (dry), 8 oz
    Parmesan Cheese, grated, 4 tbsp

Directions

Mix all ingredients (except the pasta and cheese) together in the crockpot. Cook on low for 6 hours or until the vegetables are tender. Serve over pasta with the cheese
