Ingredients

1 Whole Wheat Tortilla (50 cal version)
1/4 C Egg beaters or other egg substitute
1 slice of onion, chopped
1 slice of veggie bacon, chopped
1 fat free slice of American cheese
1/4 of red pepper, chopped
1 T salsa
spray of Pam or other non-stick cooking spray
Directions
Spray small skillet with non-stick cooking spray. When the pan is warm, throw in the onion, red pepper, and veggie bacon.
Place a tortilla on a plate. Rip American cheese in half and place pieces in the center of the tortilla, side-by-side.
Pour out 1/4 cup of egg substitute over the veggies. Scramble a bit until cooked. Scoop eggs on to tortilla. Top with salsa, fold and eat!!
If I have pinto beans, I'll add 1/4 C or less for fiber and tasty goodness.

I do like the idea of a breakfast burrito, but some may find adding multiple vegetarian labels on a recipe with bacon a bit offensive! - 12/4/08

Sorry Duke! I often make this as a veggie version for my sister who has been a vegetarian for the last 19 years. I don't know what I was thinking.
