West African Vegetable Stew

Ingredients

*Crisco Pure Vegetable Oil, 1 tbsp
Onions, raw, 2 large sliced
Garlic, 2 cloves minced
Sweet potato, 2 sweetpotato, 5" long (remove)
Red Ripe Tomatoes coarsely chopped, 1 large whole (3" dia)
Chicken Broth, 1.5 cup (8 fl oz)
Cinnamon, ground, 1 tsp
Pepper, crushed red, 1 tsp
Raisins, .5 cup, packed
Spinach, fresh, 4 cups chopped
Chickpeas (garbanzo beans), 1 can, drained
Directions
1. Cook the onions and garlic in the oil.
2. Add the potatoes and tomato, cook and store for 5 minutes.
3. Stir the broth, cinnamon, red pepper and raisins into the saucepan. Heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes.
4. Stir in the spinach and chickpeas. Cook until hot. Serve over rice or couscous, if desired (not included in the nutrition info).
