Introduction

I got this recipe from a friend, but I tweaked it to make it a bit healthier since we can eat so much of them! I would typically use the Fage 0% fat but accidentally grabbed the Total which has a lot more fat. Can cut fat with fat free sour cream, yogurt & cheese. Ingredients

    1 bag of southern style hashbrowns
    8 oz. Daisy light sour cream
    7 oz. Fage greek yogurt (or any brand)
    1 can Campbell's Healthy Request Cream of Chicken (cream of anything: celery, potato or mushroom will work too)

    4 tbsp Smart Balance Light
    1 cup chopped onion (white or yellow)

Directions

Preheat oven to 350 degree. Meanwhile, heat smart balance in a skillet and cook onions until translucent. If you want to you can wait until they carmelize but it will take longer. While, the onions cook, start mixing the other ingredients in a bowl. Reserve 1/2 cup of cheese for topping. Add the onions and butter once it is done. Spray a baking dish with cooking spray and add potato mixture. Cover and bake for 30 mins. Uncover and bak for an additional 30 mins.
