Bean Stew

Introduction

I can't take credit for this recipe, my brother Greg created it, but if you love beans then this recipe is for you. It has lots of fiber and protien, and you can make like I did or make a vegetarian version. Just substitute soy crumbles and veggie beans for the ground beef and regular baked beans. You can use any kind of beans, but this recipe shows what I used, so adjust the calories as needed. (Amazing note: I checked the calories with ground turkey and it actually went up and the fiber & protien went down- go figure). Serve this stew with a salad for a complete meal. Easy and delicious. Ingredients

    10 oz lean ground beef, 93% lean
    4.5 oz chopped green pepper
    7.5 oz chopped onion
    1 teas canola oil
    4 oz canned mild diced green chilies
    28 oz canned baked beans with onion
    15.5 oz canned chili beans in zesty sauce
    15.5 oz canned great northern beans, drained & rinsed
    15.5 oz canned butter beans, drained and rinsed
    hot sauce, optional

Directions

1. Heat oil in a large pot over medium high heat. When the oil is hot, add the onions, peppers and ground meat. Cook, stirring frequently until the meat is browned (about 5 minutes).

2. Add chilies and all the beans. Stir to combine.

3. Reduce heat to medium low and simmer for 30 minutes.

4. Serve with hot sauce (or other hot condiments) for those who like more kick.

1 serving = 1 cup of stew
