A small Italian dinner salad goes so well with any pasta dish or soup. Serve before the main course or at the same time.
You are welcome to add black olives and croutons if you like for more zest and of course more calories!

Ingredients

    1/2 cup shredded romaine lettuce
    5 red onion rings
    1 oz mozzarella cheese
    1/2 inch thick tomato slice diced
    Drizzle with 1 T balsamic vinaigrette

  • Sounds more like a Greek Salad to me with the feta cheese.
    To make it Italian you should use mozzarella cheese or some chunks of parmiggiano.
    But I agree we use this almost every day as a side dish. Also to get the veggies we need. :) - 1/5/09
