Put all in a crockpot and cook until lamb is done. To heighten the flavor of the lamb, pan-sear it first with olive oil then transfer it to the crockpot. Saute the onion, carrot, and garlic in the pan and brown, stirring frequently. Transfer the veggies to the crockpot as well. Add 1 cup of your chicken broth to the pan, set at med-hi heat, and scrape the bottom brown bits on the pan using a wooden spoon (Those brown bits are flavor residue from the veggies and lamb). Then pour that broth into the crockpot. Add the rest of the ingredients, including the remaining 4 cups of broth, to the pan and cook until done.
