Simple and quick to make. Ground turkey, bean and rice form the basis of this dish, and numerous variations are possible. Try it with tomatoes (this recipe), with corn, or another veggie of your choice. Serve by itself or with tortillas. Simple and quick to make. Ingredients

    1 lb ground turkey, 93% lean
    6 oz / 170 g red onions, chopped
    1 can diced tomatoes with chili
    1 can black beans
    2 cups cooked brown rice
    1 cup fat free mozzarella cheese
    Taco seasoning or other seasoning to taste

Directions

Cook turkey, onions and seasoning together until meat is cooked through. Add tomatoes, beans, and rice. Heat until it simmers. Add cheese and cook until cheese is melted.
