Raw carrot nut loaf

Introduction

Number of Servings: 2

Ingredients

    4 medium carrots, chopped
    2 medium stalks of celery, chopped
    Juuice of slightly less than half a small lemon
    2 tsp soy sauce
    1/3 C almonds (or other nuts)
    2 Tbsp pumpkin seed butter (tahini can be used)
    1 Tbsp parsley or cilantro, chopped finely

Directions

Soak the almonds in water overnight. Rinse and discard the water. Put the pieces of carrot and celery into a food processor with the lemon juice and soy sauce. Process until reasonably smooth, then place into a bowl. Then process the almonds until granular. Add to the carrot/celery mix. Add the pumpkin seed butter and mix well. Pat firmly into a container. Garnish with pumpkin seeds and raisins. Makes 2 large servings as a main dish, 4 as a side dish.
