Quick Veggie Lasagna

Ingredients

    1 package whole wheat lasagna noodles
    1/2 jar of your favorite pasta sauce
    1 1/2 cup cottage cheese
    1 cup ricotta cheese
    2 oz. mozzarella cheese
    3 or 4 kinds of vegetables- I used one cup each of spinach, broccoli, mushrooms, and zucchini

Directions

Boil noodles and drain. Layer noodles, 1/2 of each cheese, veggies, and sauce. Repeat- hold some mozarella. Top with last layer of noodles, more sauce, and sprinkle with remaining cheese. Bake at 350, for 30-40 minutes. Makes 8 servings in a 9'' x 13'' baking dish.

    thanks! I have never made lasagna before. cant say that anymore i guess. yummy,. I used yellow and zucchini squash tomato mushroom cauliflower and spinash. yum - 5/24/10

  • This was my first time making lasagna and this recipie made it pretty easy. I really liked it, and so did my boyfriend. I used brocolli, peppers and carrots but don't think I'll use carrots again. - 8/18/09

    I made this using spinach, zucchini, broccoli, crooked neck squash, and eggplant. I also used 1 cup of mozzarella because I had a lot on hand. I precooked the noodles and found this recipe great! - 8/5/09

    I made this even easier by not boling the noodles. Instead I used one jar of sauce mixed with an equal amount of water. It looks soupy at first but comes out perfectly. For veggies I used what I had on hand: spinach, broccoli, carrots and mushrooms. Yummy! - 7/22/09

  • It has a really good taste to it. All of the noodles did not get completely cooked. Next time I think I will pre cook my noodles. I already added a little more sauce than was called for. - 2/19/09

    I made this last night, used broccoli, rhubarb, zuchini and spinach. It actually turned out pretty good. it was the 1st time id tried to make lasagna and I was happy with it. The only thing was that the top layer of noodles didnt get very soft, I think it needed more sauce than the recipe calls for - 2/11/09
