Simple Vegan Pasta e Fagioli

Introduction

A very simple Italian-style white bean and pasta soup, made suitable for gluten-free vegans. A very simple Italian-style white bean and pasta soup, made suitable for gluten-free vegans.
Number of Servings: 3

Ingredients

    1 can white kidney beans
    3 cloves minced garlic
    2 tbsp olive oil
    1 C brown rice pasta
    2 C water
    rosemary to taste
    salt to taste

Directions

Heat olive oil. Add half of the minced garlic. Cook until slightly crispy. Add canned white beans and 2 cups water. Simmer. Use hand blender to blend most of the beans. Bring to a boil. Add pasta. Cook until pasta is tender. Add rosemary, salt to taste, and the rest of the garlic. Serve.
