Introduction

Just a shortcut for entering my favourite lunch into my tracker! I'm sure very few people in the world don't know what goes into a chicken caesar salad, but if you don't here's the list! Just a shortcut for entering my favourite lunch into my tracker! I'm sure very few people in the world don't know what goes into a chicken caesar salad, but if you don't here's the list!
Number of Servings: 4

Ingredients

    4 cups of shredded Romaine lettuce (or 2 baby cos lettuces)

    2 Chicken breasts, cut into fine strips

    1/2 cup grated parmesan

    2 soft boiled or poached eggs

    Optional additions:
    - chopped anchovies or anchovy paste
    - garlic croutons (not for low-carb)
    - caesar dressing (mayo, leom juice, worchester, and water, mixed well)

Directions

Grill chicken until juices run clear.

Layer in four bowls - lettuce, chicken, optional additions, egg and parmesan. Toss lightly or serve as is. Light and satisfying!
