Beef and Lime Rice Salad

Ingredients

    1 lb lean ground beef
    1 tsp salt, divided
    3 cups water
    1/2 tsp cumin
    1 1/2 cups uncooked rice
    1 tbsp lime juice

Directions

Cook beef and 1/2 tsp salt in a 3-qt. saucepan over medium-high heat, stirring until it crumbles and is no longer pink. Drain and pat dry with paper towels. Wipe pan clean.
Add water, cumin and remaining salt to saucepan. Bring to a boil, and add rice; cover, reduce heat, and cook 20 to 25 minutes or until water is absorbed and rice is tender. Stir in cooked beef and lime juice.
