Moist-n-Light Banana Blueberry Muffins

Introduction

Sour Cream Makes These Light & Moist!! Sour Cream Makes These Light & Moist!!
Number of Servings: 12

Ingredients

    1/2 c. Wheat flour
    1/2c. All-Purpose Flour
    3 tsp Baking Powder
    1/2 tsp Baking Soda
    1/4 tsp Salt
    1 tsp Cinnamon, ground
    1/4 tsp Nutmeg
    3 tbs Flax Seed Meal (ground flax)
    1 1/4 c Banana - mashed
    1/3 c Splenda
    1 Egg
    2 tsp Vaniilla Extract
    1 c Blueberries (if frozen, do not thaw)
    1/4c Fat Free Sour Cream

Directions

1. Combine all wet ingredients except blueberries & sour cream. Mix Well
2. Combine dry ingredients & slowly add to wet.
3. Fold in sour cream and blueberries.
4. Pour into muffin tin sprayed with non-stick spray.
5. Bake 15-20 min at 350 deg.
6. Enjoy!
