Introduction

This is a really simple recipe and you can add any vegetable that you have on hand. Sometimes I leave out the eggs and add more veggies. This is a really simple recipe and you can add any vegetable that you have on hand. Sometimes I leave out the eggs and add more veggies.

Ingredients

    1/2 cup sliced fresh mushrooms
    1/2 cup grated carrots
    1/4 cup sliced green onions
    1/4 cup chopped bell pepper
    1/4 tsp. ginger
    1 clove garlic minced
    3 cups cooked brown rice
    2 tbl. lite soy sauce
    2 eggs beaten
    1/8 tsp. ground black pepper
    3/4 cup frozen sweet peas

Directions

Precook your rice, which is why it takes so long in cooking time.
Spray large nonstick skillet with nonstick cooking spray. Heat over medium heat until hot. Add first 6 ingredients. Cook and stir 1 minute. Stir in rice and soy sauce. Cook over low heat for 4 minutes, stirring constantly until egg mixture is cooked. Add peas to rice, stir gently to combine. Cook until throughly heated
