Beef and Broccoli

Number of Servings: 4

Ingredients

    .66 lbs cube steak (tenderized beef)
    2 stalks broccoli, chopped
    1.5 cups mushroom pieces
    1 can beef consomme (about 1.5 cups)
    2 tbsp soy sauce

    .5 cup dry (or 2 cups prepared) brown rice

Directions

Prepare brown rice according to directions. Cut tenderized cube steak into one inch chunks and brown in a nonstick or cast iron skillet, add beef consume and one cup water and simmer. Chop broccoli into bite sized pieces and steam about 10 minutes (over rice if you're using a rice cooker).
Add steamed broccoli, soy sauce and mushrooms pieces to meat and simmer about 5 minutes. Serve over brown rice.
Makes 4 servings (1/2 cup rice and about 1 cup beef/broccoli each)
