Veggie Red Beans & Rice

Introduction

I found this recipe on the Food Network site but tweaked it as it wasn't as tasty (hot) as I like it.

Number of Servings: 6

Ingredients

    Olive Oil, 1 tbsp
    Garlic, 2 cloves smashed and minced
    Red Onions, raw, 1 large diced
    Celery, raw, 1 stalk, large (11"-12" long)
    1 Green Peppers (bell peppers), chopped
    Beans, red kidney, 2 cans (1 lb cans) drained and rinsed
    *Onion powder, 1 tsp or to taste
    Salt, 1 tsp or to taste
    Pepper, black, 1 dash or to taste
    Hot Pepper Sauce, 1 tbsp or to taste
    Vegetable Broth, 2.5 cup
    *Brown Rice, medium grain, 1 cup

Directions

Heat olive oil in large pan.
Add pepper, celery, onion and garlic. Sautee until soft.
Add beans, onion powder, salt, pepper and hot sauce. (I add far more hot sauce and onion powder then recipe calls for as I like it hot.) Stir well.
Reduce heat to low and let simmer. Stir occasionally.
In a medium sauce pan, bring vegetable broth to a boil. Add rice and Country Crock (or other margarine). Bring back to boil.
Lower heat on rice, cover and let simmer up to 20 minutes. Remove from heat, fluff, and let stand 5 minutes.
Add rice to bean mixture. Stir well to combine and serve.
(This is the vegetarian version. Feel free to add andouille sausage for the meat lover in your life.)
